Chilly weather has now arrived, or if you’re in Southern California (like me) you can’t wait for it to come! And when the air starts to turn chilly, there’s nothing quite like a stew simmering on the stove.
So I’ll share to you one of our favorite fall recipes- “Autumn Squash Chicken Stew” that’s so perfect, it even cooks itself! That way you can stay warm and cozy on your couch instead of feeling trapped in your kitchen slaving over the stove!

Because the fall veggie ingredients in this pot luck and in my recipe, like the butternut squash, acorn squash and sweet potatoes keep you fuller longer, you won’t need to reach for those not so healthy comfort foods during the holidays, and you can actually lose weight instead of gain weight while partying out or even while you stay plopped and cozy right on your couch.
The main ingredient of my recipe is butternut squash. This fall veggie is a powerhouse of rich flavor and nutrients.
According to studies just 1 cup of butternut squash even contains about 1/3rd of your daily amount of vitamin C to boost your immune system and fight those fall flu bugs.

How do you peel and cut an acorn squash?
I had no idea! But I learned how and it’s easy…
Then, my recipe got even easier to cook! And I used bone broth instead of just chicken broth for extra rich flavor, extra nutrients, and even immune boosting and fat burning effects.
Autumn Squash Chicken Stew
- 1 acorn squash ,seeded, peeled and diced
- 1/2 butternut squash ,seeded, peeled and diced
- 1 sweet potato ,peeled and diced
- 1 medium onion ,chopped
- 2 stalks celery ,chopped
- 1 carrot ,peeled and chopped
- 3 cloves garlic ,pressed
- 1 (14 oz.) can of diced tomatoes
- 2 skinless boneless chicken breasts ,diced
- 4 cups chicken broth
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 1/2 teaspoon thyme
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground white pepper
Place all ingredients in a large slow cooker, give it a good few stirs to blend all ingredients and cook on low for 8 to 10 hours – squash should be tender and chicken cooked through.
Because this stew not only cooks itself, looks pretty and makes you feel pretty hot while you eat it, it’s sure to become one of your favorite fall party foods that will really impress your guests without all the work!
