Autumn equals cozy meals like soul-warming soups and stews!

Chilly weather has now arrived, or if you're in Southern California (like me) you can't wait for it to come!  And when the air starts to turn chilly, there’s nothing quite like a stew simmering on the stove.

So I'll share to you one of our favorite fall recipes- “Autumn Squash Chicken Stew” that's so perfect, it even cooks itself!  That way you can stay warm and cozy on your couch instead of feeling trapped in your kitchen slaving over the stove!

Fall Holiday Parties

Autumn / Fall also marks the beginning of holiday parties with family and friends.

And if you get invited to an autumn pot luck party (hint! hint!), you'll have the picture perfect, colorful dish to share, that's actually healthy and delicious, so you can dig in and enjoy!

Speaking of an Autumn Pot Luck, YOU'RE Invited!

The Casual Veggie Cookbook” Veggie Pot Luck Party is starting right here, right NOW!

The best thing about this veggie pot luck is that you don't need to bring a thing and you can stay snuggled on your coach while I bring the hosts and dishes right to YOU!

A Veggie Pot Luck

Veggies can be fun, healthy and delicious!

Veggies can keep you looking like a “hottie” during the holiday party season.

Because the fall veggie ingredients in this pot luck and in my recipe, like the butternut squash, acorn squash and sweet potatoes keep you fuller longer, you won't need to reach for those not so healthy comfort foods during the holidays, and you can actually lose weight instead of gain weight while partying out or even while you stay plopped and cozy right on your couch.

The main ingredient of my recipe is butternut squash. This fall veggie is a powerhouse of rich flavor and nutrients.

According to studies just 1 cup  of butternut squash even contains about 1/3rd of your daily amount of vitamin C to boost your immune system and fight those fall flu bugs.

Health Benefits of Squash

Still need more reason to feel good about trying this recipe so that you can really enjoy the party while cozy on your coach?

This hearty stew is fully loaded with fiber – Thanks to all the extra veggies!

The acorn squash and sweet potatoes are packed with fiber  and  a good source of antioxidants.  Fiber aids  digestion and helps you stay full longer.

Fiber is also what helps bind toxins and those fall germs to them so that you can eliminate them from your body faster and better.  It's like detoxing while you enjoy the party.

Another reason to Party with Veggies!

What more can you ask for a delicious nutritious stew?  Oh, you can ask for it to cook itself because it does!

See how in the recipe below…

But first, “The Casual Veggie” is not just another cookbook.  It is a go to reference guide on how to pick, store and use the freshest veggies.

How do you peel and cut an acorn squash?

I had no idea!  But I learned how and it's easy…

Then, my recipe got even easier to cook!  And I used bone broth instead of just chicken broth for extra rich flavor, extra nutrients, and even immune boosting and fat burning effects.

Autumn Squash Chicken Stew

Serves: 4

Ingredients:

  • 1 acorn squash ,seeded, peeled and diced
  • 1/2 butternut squash ,seeded, peeled and diced
  • 1 sweet potato ,peeled and diced
  • 1 medium onion ,chopped
  • 2 stalks celery ,chopped
  • 1 carrot ,peeled and chopped
  • 3 cloves garlic ,pressed
  • 1 (14 oz.) can of diced tomatoes
  • 2 skinless boneless chicken breasts ,diced
  • 4 cups chicken broth
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground white pepper

Directions:

Place all ingredients in a large slow cooker, give it a good few stirs to blend all ingredients and cook on low for 8 to 10 hours – squash should be tender and chicken cooked through.

Because this stew not only cooks itself, looks pretty and makes you feel pretty hot while you eat it, it's sure to become one of your favorite fall party foods that will really impress your guests without all the work!
