It's always available and can be used in more ways than you'd think?

=> Sweet potatoes are high in antioxidants, which work in the body to prevent inflammatory problems like asthma, arthritis, gout, and many more.

=> It is rich in digestive fiber.

=> It is great in controlling blood sugar and maintaining energy. It also promotes eye health.

=> It is a good source of magnesium which is needed for relaxation and stress reduction.

And the lists of benefits goes on and on…

Try cooking sweet potato.

Sweet potatoes can be used instead of regular potatoes in most recipes.  Even french fries can be turned into sweet potato fries.

But, remember fries and chips are still treats even if they are cooked in healthy coconut oil like the ones I'm talking about above.  But, they are WAY better than majority that's out there like those chips that leave your fingers orange.

Sweet potatoes are higher in fiber and slower to turn into sugar than white potatoes.  They are filling and naturally sweet to help curb sugar cravings.

The thing I love about sweet potatoes is its versatility. It can be roasted, pureed, steamed, baked, or grilled.  It can be added to soups and stews or it can even be eaten raw on top of leafy greens for a delicious salad.

Sweet potatoes can be served as breakfast, lunch, snack or even an after-school snack.  Kids will surely  love the sweet taste and fun color.

Food in Color

Kids love their food in color.  It's catches their eye and they love it.  Think orange Cheeto fingers, Doritos,  and other orange foods your kids eat.  And remember that their's NOTHING better than nature's natural colors in food.  Like orange yams.

I always reserve my bacon fat from the Pete's Paleo bacon I cook because:

1. You save money

2. It's preservative free; no toxic nitrates or nitrites in this bacon and

3. It's even sugar free!  You won't believe how many bacons are cured with preservatives and sugar and more sugar like dextrose and other sneaky names for chemical sugar {get our list of 50+ other names for sugar here}

Don't have bacon fat, use ghee for a dairy free buttery option or coconut oil for a health boost.

Cook Less with Less Mess!

Enjoy sweet potatoes for this complete and heathy breakfast while making just 1 thing in 1 pan!

Sweet Potato with Eggs in 1 pan

Ingredients:

  • 2 sweet potatoes, diced
  • ½ onion, diced
  • 2 garlic, minced
  • 4 eggs
  • 1 apple diced (gala) or any sweet apple
  • bacon fat
  • 2 tbsp water
  • sea salt and pepper to taste

Directions:

  1. Melt bacon fat and sauté garlic and onion.
  2. Sauté sweet potatoes.
  3. Add salt and pepper.
  4. Once almost cooked, make holes and drop in eggs.
  5. Sprinkle salt on top of each egg.
  6. Sprinkle 2 tbsp water over sweet potatoes.
  7. Cover
  8. Cook until eggs are cooked as desired

serves 4
